About the bean 

Our El Salvador SHG EP Honey Processed coffee is sourced from the El Olvido estate nestled in the highest valleys of the San Salvador Volcano where one of El Salvador's first coffee trees was planted more than a century ago. 

Honeyed beans are so-called because the gooey mucilage that surrounds the parchment encasing the coffee seed remains intact during drying. The result is an intensely pleasant coffee character with a sweet complexity and we're hooked; talk about cup o' joy.

What to expect

A shade-grown 100% Bourbon variety. The tart Bourbon fruit is rounded by the buttery sweetness of the honey process. Creamy body, heightened mouthfeel, aromatic, good acidity; a semi-sweet caramel flavour with light fruit overtones - this is one easy drinking cup. 

We taste tested the Vienna roast which popped the spicy, pepper underlay of this bean. A City roast amplified a juicy acidity - a very balanced and clean cup indeed. 
Honeyed coffees are expressed best by the French press or full immersion method.

Altitude: 1,500 - 1,600 masl.

SHG: Strictly High Grown. Usually denser and higher quality than a Hard Bean (HB) or High Grown (HG). These beans are grown above 1,200 masl. (metres above sea level). 

European Prep. Indicates the coffee has undergone rigorous sorting - usually by hand to ensure defective beans and foreign material have been removed.
