About the bean
There’s nothing we like more than being able to spotlight the producers behind the coffee we present to you because the care and effort that goes into cultivating specialty-calibre coffee is an absolute labour of love—a cliche but fundamental truth of this formidable calling.
The producer of our new lot of Ethiopian Yirgacheffe GR2, Ibrahim Shafi, operates a family-run project with his wife and children working alongside. He shares his washing station with other smallholder farmers in the village of Aricha Kebele, renowned for its traceability and quality. Ibrahim processes all of these coffees personally, utilizing the washed method to highlight the intrinsic clarity and complexity of the area’s character.
We found a Full City roast profile gave us that sweet spot for body and density, a lowered acidity, and a satisfying finish. Home roasters will need to go slowly at a medium heat to ensure even development due to the density factor.
