Air pressure shortens filtering time to 20 seconds. This avoids the bitterness of long processes such as drip brewing and French press steeping.
The air pressure also gently squeezes the last goodness from the grounds, further enriching the flavor.
The acid level of coffee brewed by an AeroPress Coffee and Espresso Maker is much lower than that of conventional brewers due to a lower temperature and shorter brew time. Laboratory pH testing has measured the acid content of an AeroPress brew as less than one fifth that of regular drip coffee and less than one ninth that of French press coffee.
