About the bean
The Canadian-based BrazCof sources and sells single-origin Brazilian coffee from its family-owned farm in Brazil. BrazCof traces its roots to Fazenda Cachoeira da Grama, a Brazilian coffee farm established in 1890 in the renowned Grass Valley (Vale da Grama) region, celebrated for its high-altitude terroir, volcanic soil, and ideal climate for slow-ripening specialty beans. Fourth-generation coffee farmer and agronomist, Gabriel de Carvalho Dias, relocated to Canada in 2009 where he launched Carvalho Coffee Roasters, sourcing beans directly from his family farm, before pivoting to establish BrazCof, a direct-trade importer connecting Canadian roasters to premium green coffees from Grass Valley’s elite farms. Balancing dual roles in Brazil and Canada, Gabriel champions traceability, quality, and ethical sourcing, offering roasters exclusive access to award-winning single-origin beans.
In The Cup: We absolutely loved this one as a light roast, after having allowed a resting period of approximately a week to enhance flavour development. What a payoff! The result is a remarkably smooth and well-balanced cup with a nuanced sweetness (and no bitterness we could detect). With a medium-low acidity level, this is an ideal option for those of you eager to explore a lighter roast without tartness. In milk-based preparations (we sampled as a latte), expect a tasty creamy and mellow profile. We would definitely recommend a darker profile (Full City) for more flavour expression.
