Grown at Finca El Paraíso in Cauca, Colombia by the Bermúdez brothers—Alex, Daniel, and Diego—this Castillo lot of red plum beans is proof that relentless innovation pays off. These partner siblings aren’t just farming coffee; they’re running a precision lab in the fields.
Using their proprietary “Paraíso Red Fruit” culture (made from the beans’ own mucilage and cascara), they have mastered a double fermentation that taps into a fruit-forward fabulousness without sacrificing control. What follows is their signature thermal shock and dehumidified drying—techniques that lock in aromatics, curb inconsistency, and deliver a cup that maintains its joy from first roast to last bag.
Co-fermented coffees bring playful, vibrant flavours to the cup. Processed with red plum (alongside popular lychee and peach variants), it's easy to see why this unique profile is so sought after. Roasted as both City and Full City, Paraiso shines whether filtered or extracted for a shot of espresso. Expect a bright, sweet profile and clean, premium beans that roast beautifully. A standout note? Panela—reminiscent of fruity brown sugar, gently sweet and non-acidic, just like the beloved ingredient in traditional Mexican café de olla.
Taste: Bright plum, ripe cherry, tart raspberry, and juicy granadilla pop against a lively, structured acidity and a long, sweet cherry finish. It’s clean, energetic, and ridiculously expressive.
