About the bean

This fresh lot of Yirgacheffe GR2 is the work of various smallholders in Ethiopia's Aricha kebele (neighbourhood/village). Harvested cherries are brought by each farmer for processing by Ibrahim Shafi and his family. Ibrahim runs a small washing station with his wife and kids pitching in, sharing his resources to utilize the washed method that offerings from Aricha have gone viral for in recent years: a clean and vibrant complexity heightened by craft.

This lovely, high-scoring Yirgacheffe gives a nice full body at a Full City roast, which is our recommendation for this one. Fans of Ibrahim's washed method recommend Full City for a more gentle acidity and denser result. We love this one with a splash of cream — especially in a lighter roast where its tea-like character shines (these notes dial down when roasted darker). Added to blends, the Yirgacheffe's distinctly sweet aroma is a real treat. Go to a Full City or Vienna profile for espresso or milk-based drinks. Overall, this is an easy coffee to enjoy across multiple cups, which we do!
