About the bean

This Grade 1 washed Yirgacheffe from Ethiopia’s Chito district (Oromia region) is produced by Biru Bekele, a washing station where local farmers deliver their heirloom coffee cherries for advanced processing. Smallholder growers here practice organic and sustainable farming, handpicking each batch to preserve quality and flavour.

Established in 2019, the Biru Bekele Washing Station has emerged as a pioneering force in Ethiopian coffee, blending 18 years of artisanal craftmanship with an innovative mindset. By partnering closely with surrounding farmers, Biru Bekele refines quality through its meticulous processing methods to showcase the region’s distinct and vibrant fruit-forward character. 

Using Cimma yeast—a specialized strain for controlled fermentation—this lot underwent an 8-10 day drying window to elevate the final result, which also reduces the risk of defects.

For our taste test, we absolutely loved this one as an Americano—a fuller body and intensity by comparison to a drip brew. A perfect match for European-style preparations (lattes and the like), as well as cold brew, which we'll be preparing as fast as we can. For maximum enjoyment, we recommend a medium roast.
