A thrilling and unique offering, “Green Mist” is a sparkling Colombian honey Excelso produced by fifth-generation grower, Ana Maria Donneys.
Ana Maria doesn’t just grow coffee — she reimagines it. Using a meticulously controlled double fermentation protocol (24h + 72h carbonic maceration followed by extended anaerobic fermentation, guided by selected yeasts), the process delivers a unique sensory profile that stands out from more conventional offerings.
This is a coffee that celebrates lightness and definition. Instead of chasing bold, over-fermented notes, Green Mist delivers pure, floral-herbal brilliance: aromatic, bright, fresh mint complemented by subtle ginger notes. The beans exhibit excellent uniformity in size and density, which translates to a consistent roast. We opted for a light-to-medium range (City+), which preserved the coffee’s character while allowing its more delicate flavours to emerge cleanly.
Our taste test shared a core “fresh and sweet” foundation, yet diverged meaningfully—from smooth and intense (Americano) to a chocolate-mint vibrancy (pour-over), and a pomelo-like acidity (espresso). The double fermentation appears to contribute to the coffee’s distinctive minty-ginger aromatics and clean, layered sweetness—qualities that are difficult to achieve and genuinely exciting. Highly recommended for those seeking something out of the ordinary; we are well pleased with this one. Enjoy!
