About the bean

The high-profile Honduran coffee exporter, Caffex, is a family-owned company that has been writing the story of coffee in Honduras for over a century. In the early 1920s, Benjamin Caballero helped build one of the country’s first cooperatives in Santa Bárbara. Decades later, Roberto Hawit Castro traded his way out of the Montaña de las Flores and into export. In 2001, Raúl and Munir Hawit formalized the next chapter: Caffex, born in San Pedro Sula with a single obsession—specialty coffee moved through transparent, long-term relationships.

Today that obsession touches more than 9,000 producers. Ninety percent of coffees from here carry certification. Nearly a third come from women-led farms. The milling infrastructure is modern, the relationships are measured in decades, and the result is rare in this origin: consistency you can trust and diversity you can taste. High-grown fruit, carefully prepared, carrying the full weight of a family that never stopped believing the country’s potential was always greater than its reputation.

In the cup, the character closely aligns with other Central American origins. A City and Full City profile yielded a pleasing interplay of cocoa and citrus. Go lighter for a smoother body and darker for a brighter, juicy expression that’s a great match for espresso and plunge-press preparations. For those of you seeking a flavourful and balanced experience without intensity, this is your coffee. An excellent fit for blends alongside more complex characters. For home roasters: this one develops readily and evenly. As a blend sourced from numerous small producers, bean colour may appear both slightly lighter and darker — these are variations only, not issues. This lot remains clean and consistent throughout the process.
