About the bean

Rising sharply from the coastal plains of Sumatra’s northernmost province, the mountains of Aceh Tengah (Central Aceh) have historically been home to the Gayonese people. The region’s ideal growing conditions have fostered a long-standing tradition and a unique reputation for “Gayo Mountain” coffee.

For years, this area was plagued by civil war, forcing many farmers to abandon their land and seek refuge in the nearby city of Medan. However, following a devastating tsunami that struck northern Sumatra in 2014—the worst of its kind in modern history—peace accords were signed, bringing an end to a generation of violence and allowing many to return to their farms. In 2006, the Permata Gayo Cooperative was established when 50 farmers from five villages in the Bener Meriah district of Aceh Province came together to revive their abandoned coffee farms. Their efforts led to an increase in membership, organic certification in 2007, followed by Fair Trade certification from FLO-Cert in 2009. The cooperative has since streamlined the entire coffee production process, from farmer to final export, enhancing quality and ensuring greater traceability from Aceh to roasters. 

In the cup, we went for a Full City roast and alternated between French press and Americano. It’s becoming pretty apparent that we’re Americano addicts! Both this method and the V60 produced an intense coffee, heavy body, and creamy texture—hmmm! At a Full City roast, expect a dense and smoky profile with the Sumatra’s sweet brightness less pronounced. At a City profile, smooth and sweet moved to the fore with density intact and acidity ticking to medium. This is a great pick to offset the cold slap of a bitter winter.

Beyond the Bean

Sumatra’s Giling Basah wet-hulling method delivers an iconic flavour profile: spicy, earthy, bold bodied, and less acidic than most (which also results in a peculiar, albeit legendary porous blue-green appearance for raw beans). The country’s regional distinctions add layers of complexity, with the classic Mandheling serving up a rich chocolate-spice character.
