About the bean
This lot is the collective effort of over 267 smallholders from the Jaltenango sub-region in Chiapas, southern Mexico. A producing powerhouse, some of the country's best coffees are from here. Jaltenango is located within two natural biospheres and is host to a diverse array of wildlife, from parakeets to jaguars.
Expect a highly uniform and winning coffee with a delightful chocolate finish. Processed using washed fermentation, this Mexican offers a sweet and clean profile, making it suitable for various roast levels.

This batch of Mexican Chiapas offers a light to medium body with little acidity. Expect a well-balanced coffee with delicate fruit notes and some spice overtones. Serve to preference and enjoy. We opted for a darker roast profile for body.
