About the bean
Good news for coffee lovers from the original source of all things, coffee! Reports indicate Ethiopia appears to have avoided the more adverse impacts of the extreme weather that devastated coffee giant Brazil and raised arabica prices to new highs.
On path to enjoy a better harvest for the new 2021-22 crop cycle, the whisper of good news extends to higher yields and more diverse, quality beans after a decade of "best agricultural practices" - a nationwide project to boost Ethiopia's output through technical assistance and subsidized access to seedlings.
It's a piece of cheer and we should raise our cups and mugs in thanks. Next year is going to be a tough one as the full strike of Brazil's crop woes reaches the world market. So, stock up! That's the message here.
Our current crop of Ethiopian GR2 is the result of a gaggle of smallholder farms using traditional methods, and that means chemical fertilizers and pesticide use is highly unlikely. Even though this coffee is not an FTO, it may as well be but certification fees for small farmers can be prohibitive, hence the lack of that sticker. Selectively hand-harvested and delivered to a washing station, sorted by hand, pulped and fermented for around 36-48 hours; washed, graded, and it might have been soaked under clean spring water in tanks for 12-24 hours to remove traces of fermented mucilage. It's a journey! Once washed, we've got some drying to do. Raised beds under shade for 10-14 days, regularly turned and hand sorted to ensure quality ... We could go on and on. The beans are covered during the hottest part of the day to protect the parchment and covered again overnight to prevent condensation. And then, each and every bean is given a cuddle.

Berries, chocolate, caramel, juicy
Roast recommendation: Light to medium. A City roast was perfect. Go darker for body but the bean's unique fruitiness will fade. For an explanation of our different roasts, see here: http://greenbeanery.ca/pages/roasting-chart.
